The story
Paul Bocuse stands at 40 Rue de la Plage in Collonges-au-Mont-d'Or, just outside Lyon, where a French kitchen rooted in Lyonnaise tradition holds two Michelin stars (2026) for excellent cooking. A plaque at the entrance notes that the restaurant has been family-run since 1924.
Chefs Gilles Reinhardt, Olivier Couvin and Benoit Charvet lead the kitchen teams. The brigade includes two Meilleurs Ouvriers de France and a World Champion of desserts. The house describes its cooking as a balance of innovation and tradition, with reinvented recipes built on classic French technique.
The kitchen was renovated recently, with white walls and copper moulds hanging above the workstations. Guests can glimpse the activity on the way to their table. The façades in pistachio and raspberry shades give the building a bright, distinctive look from the road.
The restaurant has private salons named after Fernand Point, Paul Bocuse and Raymonde Bocuse. Celebrations such as birthdays, business dinners and family reunions are common here, and the Abbaye de Collonges hosts receptions as a separate venue.
