The story
Maison Soubeiran is a modern bistro at 129 cours Gabriel-Péri in Lunel, a village on the edge of the Petite Camargue in the Hérault. The Michelin Guide lists it as Recommended for 2026, and the Soubeiran family has run the table for the last 13 years.
Carole Soubeiran, self-taught, writes a tasting menu without a printed card and builds it around what local producers bring in that week. Her daughter Loli Rose now works in the kitchen beside her, while Benjamin Soubeiran looks after service and the natural wine list. Bread is naturally leavened with old local wheat and baked every morning.
On one lunch visit, the modern cuisine opened with artichoke mousse, served with crisp artichoke leaves. It continued with sander fillet under a fermented milk coulis flecked with garrigue thyme. The dining room occupies a 19th-century building with blood-red walls and terrazzo floors, and the ivy-covered patio suits warm evenings.
