The story
Les Belles Perdrix de Troplong Mondot serves modern cuisine at Château Troplong Mondot, Saint-Emilion, 33330, and holds one Michelin star (2026). The dining room looks out over the estate's vines.
Chef David Charrier has run this kitchen for more than ten years. His approach rests on precision and respect for flavor, with no signature dish. The menu keeps changing instead. Three menus are offered, from the weekday lunch "Moment Suspendu" at 58 euros to the 165 euro "L'Envol" at dinner.
The kitchen draws on a 6,800 m2 permaculture vegetable garden, and Charrier cooks from what is picked there. About 90% of suppliers sit within 30 minutes of the restaurant. Organic waste goes to the estate's chickens and pigs. The We're Smart Green Guide gave the restaurant 2 Radishes in 2026.
Pastry chef Adrien Salavert, named Champion de France du Dessert 2026, makes desserts that are lightly sweet and built around freshness. The wine list is wide and priced to be enjoyed. Guests staying at Les Clefs de Troplong Mondot can contact the sommelier a few hours ahead to plan which bottle to open.
