The story
Les Frères Ibarboure sits at 281 chemin Ttalienea in Bidart, where the brothers Xabi and Patrice Ibarboure run a modern cuisine restaurant that holds one Michelin star (2026). The dining room belongs to a four-star hotel with 13 rooms, set in a two-hectare wooded park.
Xabi Ibarboure leads the savoury side and holds the title Maître Cuisinier de France. His brother Patrice runs the pastry kitchen and was named Meilleur Ouvrier de France Pâtissiers Confiseurs. The family is now in its third generation at the stove. The cooking uses Basque and south-west produce, often pairing sea and mountain ingredients in unexpected ways.
Diners choose between the Menu Coup de Cœur, which follows the season and the chef's instinct, the Menu Dégustation, a longer tour of the kitchen, and à la carte ordering. The house invites guests to dress elegantly. Its wine cellar is one of the reasons the list draws attention, and the restaurant is also listed for vegetarian and vegan diners. It holds two radishes in the We're Smart Green Guide (2026), which reflects the family's ecoresponsible approach to sourcing.
A kitchen table is offered once per service for two to six guests, at 52 euros per person. The evening opens with champagne and amuse-bouches while guests watch the brigade work between the pastry station and the stoves. Dinner then follows in one of the indoor rooms.
