The story
Alchémille is a fine dining restaurant at 53 route de Lapoutroie in Kaysersberg, in the Colmar area of Alsace, and it holds one Michelin star in 2026. The kitchen works from its own permaculture gardens and from wild plants gathered nearby.
Jérôme Jaegle grew up in a family of butchers, trained under chefs such as Philippe Gaertner and Christian Têtedoie, and won Bocuse d'Or France in 2010. In 2015 he and his wife Marie-Laure turned a former bar in Kaysersberg into Alchémille. She looks after the dining room. He tends the gardens and the orchards of forgotten fruit varieties, and buys from the last fisherman on the Rhine. The We're Smart Green Guide awarded the restaurant 5 Radishes in 2026 for this approach.
There is no fixed carte. Dishes change with what the garden yields and what is picked that day. Guests choose among three tasting walks, which the restaurant describes as paths through plant, terroir and gesture. Dietary preferences and restrictions are taken into account before each service.
In spring and summer, on selected Saturdays, Jérôme leads a walk through the meadows of the Haut-Rhin. Guests learn to recognise and pick yarrow, garlic mustard, mugwort and wild thyme, among other plants. Back at the restaurant, a five-course tasting built from the walk follows.
