The story
Villa Pinewood in Castres is a hyper-local fine dining table at 590 chemin du Nègre, Payrin-Augmontel, and it earned one Michelin star in 2026.
Thomas Cabrol builds the menu from the Causse and the Montagne Noire, while Anne Cabrol leads the wine pairings. Only a few covers are served, and every guest sits down together to the same single menu.
Around 200 wild plants and flowers appear through the year in place of traditional spices, gathered by two foragers. Fish comes from a farm in the Montagne Noire, and the bread is made with stone-milled Barbu de Lacaune wheat. Water is drawn from two local streams and micro-filtered on site, and the kitchen holds a three-radish rating from the Smart Green Guide for 2026.
