The story
L'Oustalet, listed in Carpentras, earned one Michelin star in 2026 for its modern Provençal cooking. The restaurant's address is 5 place Gabrielle-Andéol, Gigondas, 84190, France, in the village whose wines give the house its roots.
Chef Thomas Boirel builds the menus around local growers and the rhythm of each season. Plates lean toward vegetables, and the kitchen works closely with producers who farm with care for the land. In spring, young vegetables and wild herbs sit alongside Mediterranean fish and shellfish, so land and sea answer each other on the same plate.
Lunch comes as two courses for 55 euros or three for 75 euros, served Tuesday to Friday outside public holidays. The L'Oustalet tasting menu runs three courses at 95 euros or five at 135 euros, offered at lunch and dinner from Wednesday to Saturday. The tasting menu is built as a progression, so each course follows from the one before it.
The house was conceived by the Perrin family, fifth generation of a family wine estate that owns Château de Beaucastel in Châteauneuf-du-Pape. Wine stays central here. A separate wine bar, Nez! La Cave, operates on Place de la Fontaine, and the property also offers rooms for overnight guests.
