The story
L'Ormeau is a seafood restaurant at 4 quai Thomas in Cancale, listed as Michelin Recommended for 2026. It sits inside the Hôtel Le Continental and looks onto the port of La Houle.
Christophe Wasser leads the kitchen, with Ghislain Flessel as his second. The cooking is homemade and rests on producers within 50 km: market gardeners, oyster farmers, mussel farmers and the breeders of salt-meadow lambs. The restaurant also holds a 1 Radish rating from the We're Smart Green Guide (2026).
The menu leans on shellfish and Breton ingredients. Look for stuffed shellfish with persillade, shelled spider crab, abalone from the Bay of Erquy and salt-meadow lamb. Dessert might be the "Tout caramel" profiteroles, and the ice creams and sorbets are made in-house.
Cancale is known for its oyster beds, and the dining room faces the sea. Breakfast is served here as well, as a buffet at 18.50 euros per person. Takeaway is available too, and the restaurant offers outdoor seating and wheelchair access.
