The story
Les Genêts, in Bretignolles-sur-Mer at 21 bis rue de l'Océan, Brem-sur-Mer, is a bistronomy restaurant that earned one Michelin star for 2026. Chef Nicolas Coutand and Amélie Coutand run the room, with lunches and dinners built around the same seasonal kitchen.
Nicolas Coutand grew up in Vendée and trained at the Hotel Nikko and the Restaurant du Sénat in Paris, then with Troisgros in Roanne. He returned to his home region to cook here. Weekday lunches follow a bistronomic menu, while dinners and weekends bring the gastronomic menu. Plates change with the market and local fishing boats, such as a carrot gazpacho with marinated swordfish, chorizo and combava.
The kitchen draws on a small garden where courgettes, carrots, beetroot, turnips and beans are picked in the evening, along with flowers cut the same morning. Six beehives supply honey, harvested in late May and late August. The restaurant occupies a renovated manor house, with two ground-floor dining rooms of different moods and an intimate first-floor room for private meals.
