The story
Le Belvédère stands at 11 route du Maquis-Jean-Pierre in Bozouls, facing the canyon, and its modern cuisine carries a Michelin Recommended listing for 2026. Guillaume Viala, a local chef, has owned the house since 2004.
Viala trained in demanding kitchens and spent a formative stretch at the Bras house. He held a star for 15 years, then chose a plainer path. His own words: less demonstration, more flavor. The cooking now follows the market through one menu that changes with what producers bring in, built on short supply chains and zero waste.
Le Fooding, which also listed the restaurant in 2026, described a lunch that began with marinated mullet, mussels and chanterelles in vinegar. Next came a "bouillon de culture" of 30 baby vegetables in Gascon pork broth, a reworking of the Bras gargouillou. Allaiton lamb saddle followed, then a cocoa spiral filled with chocolate and topped with tansy ice cream. The restaurant's own site lists the set menu at €35, with a wine pairing at €19.
The old-fashioned dining room has a fireplace, timeworn furniture and exposed rafters. The cellar holds some 8,000 bottles. Christine Viala built it, and Thomas now carries it on. The house opens from April to October.
