The story
L'Observatoire du Gabriel holds two Michelin stars (2026) for its modern cuisine at 10 place de la Bourse, Bordeaux. The restaurant occupies the second floor of Le Gabriel, an 18th-century house facing the water mirror and the Three Graces fountain.
Bertrand Noeureuil, born in Toulouse in 1990, became executive chef on 1 December 2023. He trained under Yannick Alléno and Arnaud Donckele, and spent his last years in the Cheval Blanc group, ending at Plénitude in Paris. At L'Observatoire his menu leans on the produce of Aquitaine, with the sea, the land and the vineyards as reference points.
The dining room is meant to feel like an apartment, bright and light, with a soft, contemporary elegance. The house itself dates from 1730 to 1755 and carries the name of its architects, Jacques Gabriel and his son Ange-Jacques. Since 2019 it has belonged to the family behind Château Angelus in Saint-Émilion.
Pierrick Chapel, the chef sommelier, arrived from La Vague d'Or in Saint-Tropez, where he first met Noeureuil. Henri Arnoult leads the pastry section after training with Thierry Bamas in the Basque Country. Recent dishes shown by the house include an artichoke plate, a soufflé crêpe cake, and farm butter served with a Merlot mirror.
