The story
La Tupina is a Southwest French restaurant at 6 Rue Porte de la Monnaie in Bordeaux, listed as Recommended by the Michelin Guide in 2026. It has been cooking the food of Gascony and Guyenne since 1968.
Franck Audu now runs the kitchen and keeps up the work of founder Jean-Pierre Xiradakis. The fireplace anchors the dining room, and the cauldron that hangs there (a tupina in Basque) gave the restaurant its name. Tricandilles sizzle and poultry roasts in front of it. The World's 50 Best Restaurants ranked the house 42nd in 2004.
The roast chicken comes from a Gironde farm, stuffed, served in a cocotte, with fries cooked in duck fat. Duck magret arrives with Sarladaise potatoes. Lamprey, which the menu calls the mythical fish of Bordeaux cooking, is served preserved, as local tradition has it. The macaronade combines pasta, cream, cèpes, bacon and foie gras. For dessert, there is a large canelé with ice cream and salted butter caramel, or prunes in Armagnac.
Stone walls and a crackling fire give the dining room the feel of a country inn in the historic quarter. At weekday lunch, a set menu of starter, main course, coffee and a "grosse merveille" costs 23€.
