The story
Calice is a modern cuisine restaurant in Béziers, at 30 boulevard Bertrand-Duguesclin, and holds one Michelin star (2026) for high quality cooking. The star was first awarded in March 2024 and has been renewed since.
The kitchen's modern cuisine is served in sequences, and every guest at the table chooses the same number. A vegetable menu called Racines follows the seasonal harvest and the gardens, while meat comes from French farms. The five-sequence menus start at 105 €.
A line of arches leads into the dining room, where a triptych by Jean Denant hangs at the centre. The cellar holds more than 800 references and 150 spirits, and the Michelin Guide has recognised it as a Cave remarquable. Guests can also stay at Hotel Particulier, a townhouse with a limited number of rooms.
