The story
Bistro de Montcaud, in Bagnols-sur-Cèze, serves modern cuisine at Hameau de Combes, Sabran, within the Château de Montcaud estate. The bistro is listed as Michelin Recommended for 2026, and its menus follow the market closely.
Chef Matthieu Hervé has led the château kitchens since 2018, bringing the clarity of his Normandy roots together with Provençal sunshine. The bistro cooking is bistronomique and built on market produce, most of it local. A short card changes with daily suggestions from the team, and a Menu du Marché is served at weekday lunch, outside public holidays and the summer period.
The Menu du Chef, offered every day of the week, opens with a duck pâté en croûte with foie gras and mustard espuma, or a gamba ceviche with coconut and lemongrass leche de tigre. Mains include filet of bar with grilled leek and wild garlic, and veal filet mignon with Jerusalem artichokes. Classics such as côte de boeuf and bouillabaisse return on the card, and bouillabaisse also features on a set Sunday menu.
Guests can dine on the terrace in the park, or indoors in an air-conditioned room with large windows onto the grounds. In winter, a stove keeps the dining room warm. The château's one-star gastronomic restaurant, Le Cèdre de Montcaud, sits on the same estate for a more formal evening.
