The story
Palégrié, at 66 Rue de la Tour in Autrans, France, is a modern bistro in the Vercors that earned a Michelin star in 2026. The kitchen cooks almost entirely over embers, and the set menus draw on produce from the surrounding countryside.
Guillaume Monjuré cooks the whole menu over the fire, preferring slow, primitive methods to modern equipment. The flame leaves smoky notes from aromatic herbs and gives fine ingredients a quick, direct char. Le Fooding named the restaurant its Best restaurant in 2024.
Three set menus run from 75 € to 155 €, and the largest is served only to the whole table. Dishes include a ratatouille opener with aged olive oil and Rencurel basil, and duck from Chasselay cooked on the embers with blackcurrant and gentian jus. Chrystel builds the wine list in the family grange, with a varied selection from many regions, some well beyond the Vercors.
