The story
Oxalis is the bistronomic restaurant of the Auberge de la Tour, at 2 place de la Fontaine in Marcolès, a short drive from Aurillac in the Cantal. The Auberge holds a Michelin star for 2026, and Oxalis serves seasonal, contemporary cooking rooted in the region.
Renaud Darmanin leads the kitchen, and the menus change with the seasons. The house names its suppliers on its website, among them a hydromel maker in Marcolès, a poultry farm in Ayrens and an organic grower in Leynhac. Michelin's Bib Gourmand for 2026 recognises the good-value cooking at the table.
The restaurant reworks the classic profiterole, replacing the chocolate with a fruit in its seasonal version. Oxalis serves lunch from Tuesday to Saturday, and chocolate lovers can still order a different dessert.
