The story
Les Maisons Rabanel is a vegetable-led fine dining address at 7 rue des Carmes in Arles, France, and it holds a Michelin Recommended distinction for 2026. The kitchen puts plants at the centre of every menu, under a style the chef calls Greenstronomy.
Jean-Luc Rabanel has cooked for more than 15 years and describes himself as a master chef of France. Roots, leaves, flowers and wild herbs take the lead on the plate. Each composition aims for a clear, sharp burst of flavour, so the vegetable is never an afterthought.
Le Greenstronome is the restaurant and Le Greeniotage the bistro, both under the same chef. The house also runs Les Jeudis Gastronomiques, cooking classes that cover vegetable cooking methods, seasoning, stocks, sauces and plate composition. Les Appartés, the guest house, suits groups, families and friends who want to stay close to the kitchen.
