The story
Frederiksminde is a modern cuisine restaurant in Præstø, Denmark, at Klosternakken 8, 4720 Præstø, and holds one Michelin star (2026). It sits inside a hotel with a long civic past, and the kitchen cooks to the calendar.
The menus change with the calendar. The autumn and winter function menu lists dry-aged organic pork with winter cabbage and brown butter sauce, along with wild duck served with beetroot and fermented berries. Spring brings white asparagus under Havgus cheese sauce and lovage oil. At lunch, Ingrid serves modern smørrebrød.
The hotel stands on the grounds of a former Antonitter monastery, the only one in Denmark. The building began as a pavilion for townspeople, opened in 1870, and was enlarged in 1901 and 1926. In 2003 shipping magnate Hans Michael Jebsen bought the hotel. The White Guide has rated it at global masters level (2026), praising how it joins historic frames with a forward-looking approach to raw materials.
