The story
Uformel, at Studiestræde 69 in Copenhagen, is a modern cuisine restaurant recommended by the Michelin Guide in 2026. It sits two minutes from Rådhuspladsen and works as the livelier younger sibling of Formel B, opened in 2014 as a looser alternative to formal fine dining.
The kitchen cooks with seasonal vegetables and builds dishes on deep, clean flavours, with playful touches drawn from Asian ingredients. Guests can take the five-course menu composed by the head chef or assemble their own meal from the à la carte card of 10 to 12 dishes. The restaurant suggests four to six dishes per person, and vegetarian or vegan requests can be accommodated if noted at booking.
Hiramasa arrives with pickled ginger and white pomelo, while cod comes with yellow beetroot, browned butter and X.O. sauce. Roasted pork is served with beetroot, umeboshi and morel. Snacks such as crispy potato with cod roe and kimchi open the meal, and dessert might be sorrel sorbet with toasted coconut and lime. The menu changes with the season, so the card is a guide rather than a fixed line-up.
The dining room is bright and warm, with wood, textile and steel balancing rawness and refinement. The sommelier, Martin Iuel-Brockdorff Bek, has built a wine menu matched to each course. The list runs from Champagne, Burgundy and Piedmont to lighter, juicy modern wines and natural wines, offered by the glass and bottle across several price levels. The We're Smart Green Guide also awarded Uformel 2 Radishes in 2026.
