The story

Tèrra, Copenhagen: Nordic Zero-Waste Cooking with an Italian Accent

Tèrra is a Nordic restaurant at 65 Ryesgade in Copenhagen, rated Very fine level by the White Guide in 2026. Chef Valerio Serino and designer Lucia De Luca run it together, and the White Guide compares its cozy rooms to a Roman dining room.

Cooking with an Italian accent

The White Guide praises inventive dishes that avoid gimmicks. Its example is an amatriciana made with spaghettone, braised organic pork cheek and a sauce of puréed borlotti beans, bell pepper and tomato powder. Bread comes with fruity olive oil from Lazio and fried kale with a reduced yellow tomato dip. There is a single, fairly extensive menu.

Zero waste as a method

The restaurant calls itself neither entirely Nordic nor strictly Italian. Its kitchen turns scraps into by-products, and used coffee grounds become kombucha, cookies or compost for the herb and flower garden. The We're Smart Green Guide gave Tèrra 2 Radishes in 2026.

The room and what comes next

The dining room is described as a living room with a view of the open kitchen and only three tables. Lucia chooses natural wines to suit each guest. The team has announced a short break before finding a new home, with pop-ups and special events in the meantime.

White Guide — Very fine level

In cozy interiors that could just as easily have been located in the heart of Rome, designer Lucia de Luca and her skilled chef and partner Valerio Serino ensure you receive an authentic and superbly tasty meal paired with excellent natural wines. The style differs from what you typically encounter on the string of traditional and quality Italian restaurants that Copenhagen has gradually acquired. The dishes are indeed inventive, without devolving into gimmicky fare and misconceptions about what Italian cuisine should entail—a pitfall one sometimes actually encounters right here in Rome. The only flaw is that there is only one, albeit relatively extensive, menu. The ingredients speak their own beautiful language. One of the most remarkable olive oils, mild and fruity from Lazio, arrives at the table alongside water and a snack of fried kale with a reduced yellow tomato dip, intended for dipping the rustic sourdough bread. The flavor is pure Italy, despite the kale. The kitchen loves using powders, but these are crafted from pristine ingredients with Italian undertones: red pepper, tomato, or capers. These are the untouchable classics, methodically tweaked just slightly, much like an amatriciana reimagined with spaghettone—thick spaghetti—paired with organic braised pork jowl, a sauce of puréed borlotti beans, bell pepper, and tomato powder. It offers a buttery softness while the pasta remains perfectly al dente. A match made in heaven. The meal composition mirrors that of the homeland, featuring abundant greens, a fine pasta, and a modest yet exquisite portion of rump steak, simply served with green long beans and a touch of brown butter cream. While a wine menu exists, Lucia gladly selects a wine that aligns with the guest’s preferences. You feel pampered and transported through a delightful universe that firmly places Tèrra at the pinnacle of excellence.

White Guide — Very fine level

In cozy rooms that could just as well be in the heart of Rome, designer Lucia de Luca and her talented chef and partner Valerio Serino ensure you get a genuine and top-notch meal paired with excellent natural wines. The style is different from what you typically experience at the strip of traditional and good Italian spots that Copenhagen is now equipped with. The dishes are twisted in creative ways, without descending into pretentious nonsense and misconceptions about what Italian food should be—something you can actually encounter in Rome itself at times. The only hitch is that there's just one relatively large menu. The ingredients speak their own beautiful language. One of the most formidable olive oils—mild and fruity from Lazio—for dipping the rustic sourdough bread arrives at the table with water and a snack of fried kale plus a reduced dip of yellow tomatoes. The flavor is pure Italy despite the kale. The kitchen loves dust, but the dust is made from clean ingredients with Italian undertones. Red pepper, tomato, or capers. These untouchable classics are methodically shifted just a bit, like the amatriciana, whose pasta was spaghettone—big spaghetti—with organic braised pork cheek, a sauce of pureed borlotti beans, bell pepper, and tomato powder. A creamy tenderness alongside pasta that's perfectly al dente. A match made in heaven. The meal composition is like back home, with lots of greens, good pasta, and a little but exquisite meat from rump steak, simply served with green long beans and a bit of browned butter cream. There's a wine menu, but Lucia happily finds a wine to match the guest's wishes. You feel pampered and on a journey in a beautiful universe that places Tèrra at the top of a very good class.
