The story
Restaurant Bühlmann, at Scheelsmindevej 35 in Aalborg, Denmark, runs a Danish and International kitchen inside a manor house that is more than 200 years old. The White Guide awarded it Masters level for 2026.
Head chef Alexander Johnsen hand-picks the season's best ingredients for the menus. The estate's Swiss roots, brought by the family that has run the house since 1960, shape the reinterpreted dishes. The restaurant serves its gourmet menu and à la carte dishes in the manor's dining rooms.
Many of the ingredients on the menu are grown and harvested in the manor park, which lies directly below the restaurant. A greenhouse, the park and the terrace all form part of the meal. On fine days, lunch can be taken outdoors on the terrace, which looks over the park.
The manor has its own old wine cellar, tended by the restaurant manager and sommelier. Its red Burgundy and Bordeaux selection stands out, along with a collection of DRC wines. The restaurant also holds 1 Radish from We're Smart Green Guide for 2026.
