The story
Nav, a modern Croatian restaurant at Masarykova Ulica 11a in Zagreb, earned 18 points from Gault&Millau for 2026. The kitchen works through a tasting menu of ten courses, and the dishes change daily as the ingredients do.
Tvrtko Šakota reworks familiar local flavours into new, often unexpected forms. His recipes start from traditional Croatian cooking, then draw on techniques he picked up during years of travel abroad. He presents each course himself and explains where every ingredient comes from and how it was prepared.
Among the courses are curry with a dumpling of Banija pork, and donkey roasted in the shape of a cannolo and filled with nuts. Prawns are paired with Japanese turnip. The most theatrical moment happens at the table, where Šakota presses bigoli through a traditional bigolaro. They arrive with smoked Boškarin cheeks and seven-year-old cheese from the island of Pag.
The menu relies on organic and biodynamic produce from Croatian farms, wild Adriatic fish and free-range meat. Ingredients are microseasonal, so the menu shifts from day to day. The tasting menu is not fixed. It adapts to each guest's preferences. Wine pairing is available, and the wine list features only biodynamic and organic bottles. The Michelin Guide lists Nav as Recommended for 2026.
