The story

Kaštel Zadar: Contemporary Mediterranean Dining in a 13th-Century Castle

Kaštel is the restaurant of Hotel Bastion at Bedemi Zadarskih Pobuna 13 in Zadar, Croatia, serving a contemporary Mediterranean menu inside a renovated 13th-century castle. Gault&Millau awarded it a score of 13 for 2026.

Dalmatian cooking with a modern touch

The kitchen builds on Dalmatian ingredients and techniques. Gault&Millau singled out the sea bass ceviche, brightened with lemon and red onion over a light fish stock, and the homemade pasta with Adriatic scampi. The main course pairs sea bass fillet with Swiss chard, a classic Dalmatian combination. Dessert is white chocolate mousse with raspberry coulis.

The room and the wine list

The dining room sits within the old stone walls, with an elegant, understated interior. The wine list focuses on Croatian bottles, especially from Dalmatia, and the staff are happy to suggest pairings.

Restaurant Kaštel, located within the boutique hotel Bastion in the very heart of Zadar, offers a unique gastronomic experience in the setting of a renovated medieval castle from the 13th century. The combination of stone walls, elegant interior and discreetly luxurious atmosphere makes it the ideal place to truly enjoy Dalmatian cuisine with a modern signature. We started the dinner with the sea bass ceviche, a refreshing and precisely balanced dish in which lemon, red onion and a light fish stock are harmoniously combined, emphasizing the natural freshness of the fish. This was followed by homemade pasta with Adriatic scampi, rich and aromatic, with a clearly pronounced taste of the sea and perfectly cooked pasta. The dish confirms the restaurant’s focus on quality and local ingredients. For the main course, we chose the sea bass fillet with Swiss chard, a classic Dalmatian combination prepared with refinement and moderation, where simplicity was the greatest strength of the plate. The dinner was rounded off with dessert – white chocolate mousse with raspberry coulis, a light and elegant finish that brought the perfect balance of sweetness and freshness. The wine list of the restaurant offers a rich selection of Croatian wines, especially from Dalmatia, with their expert staff happy to suggest ideal pairings. Thanks to the superb cuisine, attentive service and unique ambiance, Kaštel is a restaurant you will be happy to return to.
