The story
Bedem is at Vladimira Nazora 9 in Varaždin, where a contemporary Croatian kitchen holds a Michelin Recommended distinction for 2026. The restaurant sits near the old town walls, and its cooking starts from regional recipes and local produce.
Anđelko Levanić and Zlatko Novak run the kitchen. Both are Croatian national culinary champions, with medals from culinary Olympiads and the World Culinary Cup. Their dishes begin with original local recipes, and they use ingredients such as pumpkin seed oil, forest mushrooms and Zagorje turkey.
The smoked venison ham comes with grabancijaš cheese and pumpkin seed oil. The goose liver is wrapped in puff pastry and served with a seasonal mushroom sauce. Duck breast arrives on smoked cheese and muscat risotto, with a balsamic and honey sauce. Štrukli are handmade, so expect a short wait for them. Gault&Millau gave the restaurant a score of 14 for 2026.
The dining room is spacious and comfortable, with a winter garden and a summer terrace. The wine list leans toward northern Croatian vineyards and Istria, with a few international bottles. Reservations are recommended, since the restaurant is one of the most in-demand tables in Varaždin.
