The story
Proto Fish is a seafood restaurant at Široka ul 1 in Dubrovnik, listed as Recommended by the Michelin Guide in 2026. It has served the Old City since 1886, on the corner where Široka and Vara streets meet.
Chef Boško Lonac works from the day's catch, so the menu shifts with the weather and what the boats bring in. Fish is often grilled plainly with olive oil, salt and lemon. Vegetables come from gardens in Župa Dubrovačka, farmsteads in Konavle and nearby islands. Gault&Millau gave the restaurant 14.5 points in 2026.
Octopus salad and gratinated oysters from Mali Ston are among the starters. Monkfish medallions have a firm, lobster-like bite and come grilled or in a delicate sauce. Sea bream is gratinated with black-olive pâté, and the risotto gets its colour from cuttlefish ink. Flambéed scampi tails and ricotta ravioli in a sweet wine sauce round out the longer list. The menu rarely changes, which regulars count in its favour.
The dining room fills a historic palace, with stone walls and arches and only a few tables. Upstairs, a covered terrace looks across to neighbouring palaces. The wine list is extensive and leans toward local and regional bottles.
