The story
Amber, at 15 Queen's Road Central in Hong Kong, is a French fine-dining restaurant that holds three Michelin stars, most recently confirmed in 2026. Chef Richard Ekkebus leads the kitchen on the seventh floor of The Landmark Mandarin Oriental. The restaurant is closed until 22 February 2026 while the hotel undergoes a renovation.
Ekkebus has lived in Hong Kong for more than two decades, and his French technique now reflects local flavours and textures. Each dish draws on regional farmers and fishermen. He combines Japanese and French methods, and the cooking stays light, with clean flavours. Dairy has been removed from the menu, and refined sugar and salt are kept low, which suits lactose-sensitive guests.
The room was redesigned in 2019 by New York designer Adam Tihany, with soft curves and gold sculptures hanging overhead. Window-side tables face the skyline. Staff explain where each ingredient comes from and what inspired each plate. A chef's table encounter means every table can glimpse the kitchen at some point during the meal. Smart, elegant dress is requested.
Veteran sommelier John Chan guides the wine list. The mocktails and housemade juices are also worth ordering, including a tart cherry juice from Germany.
