The story
Sense in Hangzhou, at An He Yin Shi Resort, X-Livin, 2077 Yuewang Road, Xiaoshan, is a Dutch and French restaurant that holds one Michelin star (2026). The menu centres on multi-course meals, with a separate card of oysters, charcuterie and caviar.
The kitchen follows the Dutch Cuisine philosophy, built on seasonal, organic and locally sourced produce. Owner-chef Dennis Middeldorp has drawn vegetables and herbs from the Hartenboeren food forest, and he has kept his interest in meat and fish alongside them.
Reviewers describe the cooking as modern international, a label that fits plates which resist simple categories. Rosewater-marinated tuna belly comes with melon and radish in a vinaigrette of rosewater and Dutch soy sauce. A house classic is ox fillet from the Dutch Pasture Round breed, served with its own jus, long pepper and kaffir lime. Wagyu A4 beef and an extra cheese course are among the specials.
The wine list is presented on a tablet and leans toward Old World labels, with organic and biodynamic bottles given prominence. A cheese trolley closes the savoury courses, and the open kitchen gives diners a view of the cooks at work.
