The story

Blue by Eric Ripert, George Town: Five-Star Seafood on Seven Mile Beach

Blue by Eric Ripert is a seafood restaurant on Seven Mile Beach, Grand Cayman (KY1-1209), in George Town. It holds a Forbes Travel Guide Five-Star rating for 2026. The oceanfront dining room is part of The Ritz-Carlton, Grand Cayman.

Multi-course seafood

The menus here follow the range of the ocean. Cayman conch, a local staple, comes in slices with cucumber and a dash of yuzu emulsion. From Ripert's Le Bernardin, the kitchen also serves paper-thin pounded tuna over foie gras with a toasted baguette.

The kitchen

Chef de Cuisine Michele Tenzone runs the line. He trained in Michelin-starred kitchens in Italy, China and Luxembourg before arriving in Grand Cayman. The hotel describes his approach as fresh local ingredients handled with precision. The vegetarian menu keeps that focus. Its Avocado pairs charred avocado and hearts of palm with a sweet mango vinaigrette, in the spirit of an aguachile. Its Beetroot is a braised tart topped with brioche-horseradish crème.

Cocktails and cellar

Caribbean flavor reaches the bar too. The espresso martini uses housemade coffee liqueur made with Jamaican Blue Mountain cold brew. The wine list runs past 700 vintages, from familiar vineyards and far-flung regions, and earned a Best of Award of Excellence from Wine Spectator in 2024.
