Cooking with local ingredients

Executive chef Tim Hui builds the menu around ethically sourced, seasonal ingredients in modern all-day dishes. He says he stays close to the flavours he grew up with while trying new approaches through classical technique. Hui trained at the Vancouver Community College Professional Culinary Program, graduating in 2011.

Wine and cocktails

Wine Director Mike Cooke pours a list weighted toward B.C. producers, alongside select international bottles. Wine Spectator gave the list an Award of Excellence in 2024. Bar manager Aman Nijjar makes as many cocktail components in-house as possible, and his classics carry a West Coast twist.
