The story
Botanist, at 1038 Canada Place in Vancouver, is a Pacific Northwest restaurant that earned a Best of Award of Excellence from Wine Spectator in 2025. The seasonal kitchen, part of the Fairmont Pacific Rim, builds its menus around produce and seafood from the region, and the restaurant is also listed as Michelin Recommended for 2026.
The Executive Chef's menus change with the seasons and draw on sustainably sourced seafood and produce from local growers. Dishes on the menus include black truffle spring shoot salad, hand-cut beef tartare with smoked egg yolk, and black pepper-crusted salmon with salmon roe. The dessert list ends with cara cara orange cremeux over a molasses cake.
Creative Beverage Director Grant Sceney leads the bar, where the Cocktail Lab approaches drinks with a culinary mindset. Botanist Bar ranked #38 on the 50 Best Bars North America list. The menu runs from the Cactus Kiss, made with blanco tequila and prickly pear, to free-spirit options such as First Bloom, which uses cherry blossom tea and Douglas fir.
The restaurant is organized into a Dining Room, the Cocktail Bar and Lab, a Garden and the TASCHEN Library. The Garden is a glass-walled room with a trellis and dozens of plant species. The TASCHEN Library is one of only two TASCHEN retail locations in Canada, with more than 275 books, available by appointment. A separate private dining room seats up to 14 guests.
