The story
Le Hatley Restaurant in Sherbrooke serves Canadian cooking at 575 rue Hovey in North Hatley, inside the Manoir Hovey on the shore of Lake Massawippi. The restaurant holds a Michelin Recommended distinction for 2026, and its kitchen works from the produce of Québec's Eastern Townships.
Chef Alexandre Vachon draws on Québec terroir, childhood memories and family heritage. He is the grandson of farmers, and his plates celebrate leaves, roots, flowers and mushrooms. Everything is prepared in-house, with patience and close attention to the seasons.
The menus follow the calendar. Spring brings young shoots and wild flowers from the forests along the Massawippi, summer brings garden and orchard produce, and autumn brings woodland flavours. Winter leans on broths and fire-cooked dishes. Guests can order the Menu Découverte, a vegetarian version of it, the table d'hôte, or breakfast.
The wine list favours rare vintages, emerging regions and Canadian bottlings, each chosen to pair with Vachon's cooking. Sparkling selections range from Champagne houses to Canadian cuvées. The restaurant received a Wine Spectator Best of Award of Excellence in 2003.
