The story
Toque! in Montreal cooks a seasonal Canadian menu at 900 Place Jean-Paul Riopelle, and Forbes Travel Guide awarded it a Four-Star rating in 2026. The restaurant stands in front of the Palais des congrès, where its modern Canadian kitchen draws on Quebec producers.
Normand Laprise and Christine Lamarche opened the first Toque in 1993 and moved to Place Jean-Paul Riopelle in 2004. The kitchen buys from small Quebec suppliers, including Chasse-Marée for seafood and Boucherie De Tours for lamb. The menu changes with the day's produce, so dishes shift from one week to the next.
The six-course tasting menu is chosen by the whole table and served only in the evening. The wine list carries around 400 labels, and the cellar holds more than 6,000 bottles, with Quebec wines and natural wines included. Cocktails are built from homemade juices, infusions and syrups, plus spirits from Quebec and Canadian microdistilleries.
