The story
Ama.zo - Cozinha Peruana, at Rua Guaianases 1149 in São Paulo, is a Peruvian kitchen that draws on Amazonian ingredients and recipes. The Michelin Guide 2026 lists the restaurant as Recommended, and the house serves a Peruvian menu with Japanese-Peruvian and Chinese-influenced dishes.
Enrique Paredes, born in Lima, learned to cook helping his father prepare family meals on weekends. He moved to Brazil in 2018 and has run the kitchen since then. His cooking reworks Peruvian classics with Andean ingredients and local produce, with Amazonian flavors at the center.
The menu moves between criollo dishes, nikkei fusion and chifa, with bold chili peppers throughout. In 2024 Paredes launched Noches Nikkei, a monthly series of dinners cooked with guest chefs, starting with Wdson Vaz. The restaurant is also listed in the Smart Green Guide 2026 with one radish.
