The story
Le Coq aux Champs is a French restaurant at rue du Montys 71 in Soheit-Tinlot, near Tinlot, Belgium. The kitchen holds one Michelin star (2026), and chef Christophe Pauly cooks a seasonal French menu in the Condroz countryside.
Christophe Pauly has run the restaurant since 2003, when he and his wife Catherine took it over. Gault&Millau awarded the kitchen 17.5 in 2026, describing cooking that looks simple but is strict and demanding. The sauces are deeply flavored, and each ingredient is chosen for its authenticity.
The French menu changes with the seasons and with the producers Pauly works with. Plates are described as clear and precise, built from modest or rare products. Pauly keeps close ties to artisans and growers in his region, and his cooking aims for simplicity and shared pleasure.
