The story
Melchior is a Fusion and Modern French restaurant at Veemarkt 47 in Tienen, Belgium, and it holds a Michelin star for 2026. The dining room occupies a 16th-century townhouse in the town centre, where chef Gilles Melchior cooks with an Asian-inspired palette.
Gilles Melchior, who worked at Hof van Cleve before opening here, builds his menus around top-quality ingredients. The sauces are stripped back, so the product stays in front. Gault&Millau gave the restaurant 15.5 points in 2026.
The "Melchiors' choice" tasting menu moves between hamachi with sushi rice and yuzu kosho, langoustine with kombu and celeriac, and guinea fowl with winter truffle and chicory. Dessert brings blood orange, chocolate and yoghurt. Lunch runs Tuesday to Friday as a set menu chosen by the kitchen, and a wine or alcohol-free pairing can be added to either format.
