The story
Au Gré du Vent, at Rue de Soudromont 67 in Seneffe, Belgium, is a modern gastronomic restaurant that holds one Michelin star (2026). Chef Stéphanie Thunus cooks here in a converted barn on the edge of the Hainaut countryside.
Stéphanie Thunus trained at the hotel school in Namur and then worked under established chefs. She opened the restaurant in 2012 with her husband, Sébastien, a short drive from the family farm. Her cooking depends on local, seasonal produce, and she works closely with producers she knows well.
The restaurant's 2025 Christmas menu, priced at 65 euros, shows her approach. It opened with half a roasted lobster served with a stuffed ravioli, small vegetables and a creamy bisque. The main course was farm-raised capon stuffed with chestnut, served with chicory, a truffle croquette, celeriac risotto and a fine champagne sauce. Dessert was a yule log with Madagascan vanilla and salted-butter caramel. The kitchen also serves a hamachi ikejime, which the team has described as a fish of great delicacy.
The dining room occupies a former barn, and Gault&Millau (2026) gave the restaurant 16 points, describing a balance between serene and luxurious. The restaurant also offers outdoor seating, catering and private events, and a private chef service.
