The story
Paul de Pierre is a French restaurant in Oudenaarde, at Nederholbeekstraat 135 in Maarkedal, and Gault&Millau scored it 13.5 in 2026. The house sits in the heart of the Flemish Ardennes, and the French kitchen works with a short list of seasonal dishes.
Fabian Bail has been head chef for more than ten years. The menu changes roughly every two months, built on the best local ingredients and the market. Guests choose a four-, five- or six-course French menu, a vegetarian version, or dishes from the à la carte list.
The restaurant garden grows 88 kinds of vegetables, herbs and fruit, cultivated naturally and organically and used according to the season. Sommelier Paul-Henri Cuvelier draws on more than 2,000 wine references, and the wine list received a Wine Spectator Best of Award of Excellence in 2016.
