The story
La Roseraie, at Route de Limet 80 in Modave, is a Modern French restaurant that holds one Michelin star in the 2026 guide. It has run since 1982 as a family house, with chef Marie Trignon at the stoves.
Marie took over the kitchen in the line of her father, Vincent Trignon. She works close to the seasons and talks about the right gesture, precision and respect for the product. Gault&Millau scores the table 15 in 2026 and describes a sensitive mix of tradition and modernity, served in a renovated 19th-century country house.
The menus change every two months, so the dishes follow the produce. Recent ones include tuna tataki with Cavaillon melon and garden herbs, Saint-Pierre poached with daikon and edamame, and langoustines à la plancha with corn bavarois and girolles. Pigeon comes with calvados apple and figs, and dessert might be yellow peach with basil emulsion and honey ice cream. The five-course menu starts at €105, and a three-course lunch at €62 is served on Fridays.
The restaurant sits in a villa from another era, set against clean modern design. A greenhouse dating from 1890 anchors the garden. Guests who want to stay on can book one of three rooms or a shelter at the edge of the private woods.
