The story
Cœur de Bœuf is a contemporary grill at Avenue General Gracia 23 in Profondeville, and the Michelin Guide awarded it a Bib Gourmand in 2026 for good quality, good value cooking.
John Maes and Nerdjivane opened the restaurant in 2017, a few hundred metres from their first address, La Cuisine d'un Gourmand. The house motto is to break the codes. Gault&Millau, which scores the kitchen 12 for 2026, describes a modern setting where the grill takes the lead and the team gives the word brasserie a fresh, bolder meaning.
The beef comes from breeders in ten countries, aged or not, and arrives as entrecôte, steak, côte à l'os or a slow-cooked dish. Vegetables, sauces, fries and croquettes are built around it. Starters lean refined: an egg cooked at 62°C is served with porcini cream, mushrooms and coppa on toast. The menu changes with each new carte.
A large beef motif on the wall gives the house its image. There are no tablecloths and no stiff service. The menu hides small surprises, and you can ask for the newspaper while you wait. The grill describes itself as a place to enjoy good meat and good company without fuss.
