The story
Castor, at Kortrijkseweg 164 in Kortrijk, is a modern French restaurant that holds two Michelin stars (2026). The kitchen builds its menus around pure, fresh ingredients and regional produce, with a tasting format that runs from four to seven courses.
Chef Maarten Bouckaert works from a product-focused kitchen that respects the terroir. Gault&Millau awards Castor 17 points and singles out his sauces, praising their nuanced flavour, clear colours and precise texture. The restaurant describes its cooking as refined but unpretentious, with contemporary flavours and a no-nonsense approach in both the dining room and the kitchen.
The seasonal menu opens with North Sea mackerel served with cucumber, yuzu and smoked hay. Line-caught sea bass comes with young broccoli, kombu and vermouth, and langoustine arrives with leek and cauliflower. Ibérico secreto is prepared yakitori-style with sesame, onion and seroendeng. Desserts lean fruity, with raspberry paired with buttermilk and apricot with almond and chocolate. A vegetarian Root, herb and greens menu runs alongside the main tasting menu, and guests can add 10 g of Osietra caviar for a supplement.
The atmosphere is relaxed, and the team puts warm hospitality first before the more refined courses arrive. Food is served indoors to protect the flavours, but the terrace is open in good weather for an aperitif or coffee. Parking is available both in front of and behind the restaurant.
