The story
La Fleur de Thym, at route de Liège 34 in Houffalize, is a French restaurant with a modern kitchen, scored 14.5 by Gault&Millau for 2026. The dining room has operated since 2004 in a contemporary, intimate setting above the Ardennes town.
Chef David Heine, originally from Gouvy, pairs local terroir with ideas from further afield. The single menu is rewritten about every six weeks to follow the seasons. The market menu has included lobster with pigeon or St Pierre fish, finished with dessert.
Olivia Sauvage leads the room with her team. She bakes the house bread and makes the desserts and petits fours. Tuesdays bring only the Mardi Fou menu, served at lunch and dinner and renewed weekly. In summer, a terrace opens for aperitifs and outdoor meals.
