The story
Schatteman serves contemporary cuisine at Kruisstraat 13 in Hertsberge, and Gault&Millau rated it 16 in its 2026 guide. The Michelin Guide also lists the restaurant as recommended for 2026.
Chef Gregory Schatteman cooks, and his wife Marieke Moyaert looks after the dining room. The restaurant sits in the middle of the woods, away from daily bustle. Gault&Millau singles out the delicate dishes, the good price-to-value ratio and a friendly, attentive hostess. The kitchen's stated approach is respect for each product and each season.
This modern cuisine comes as set menus. A three-course Marktmenu costs €69, and the Signature adds a fourth course for €94. The longer gastronomic menus run to six or seven courses (€114 and €134), with wine or alcohol-free pairings offered. On the sample menu, Dutch yellowtail kingfish arrives with kiwi, radish and a smoked buttermilk vinaigrette. Confit fennel with a lobster and chorizo ragout is flagged as the house favourite. Elsewhere there is Oosterschelde eel with peas and Belgian green asparagus, and white asparagus soup with Thai basil and a house-made goose liver terrine.
Main courses offer a choice of cod with cucumber, broccoli and peanut jus, or veal with olive and artichoke heart. A Kip Dumas vol-au-vent with sweetbread and morels comes with a supplement. Cheese from affineur Van Tricht can replace dessert. Otherwise the sweet courses are chocolate with chicory and caramel, or Amarena cherries with yoghurt and rhubarb. The kitchen does not cook vegetarian or vegan menus, and pescatarian requests should be made in advance.
