The story
Au gré des saisons serves modern cuisine with Italian and Mediterranean leanings at rue d'Achet 70 in Achet, part of Hamois. The Michelin Guide gave it a Bib Gourmand in 2026 for good quality, good value cooking.
Chef Gregorio Clavello cooks food that Gault&Millau (13 points in 2026) calls seasonal, honest and precise, with a Mediterranean bent. Its inspectors tasted crunchy kataifi with sardines and a fillet of scorpionfish. The chef puts his own philosophy simply: good cooking is honest, sincere and simple.
The menu changes through the year, with a new one for February and March 2026 and another for June. An earlier spring menu offered confit pork cheek or salmon gravlax to start, then redfish or free-range chicken ballotine. For a chefs' anniversary menu, dessert was a cannoli filled with fresh ricotta and honey from Fernelmont. Special menus also mark Valentine's Day and New Year.
The dining room sits in a small farmhouse of Condroz stone, with a convivial mood. A terrace opens in summer, and there is parking and access for guests with reduced mobility. The wine list is built around growers who work with passion and respect for the product. The room can also be privatised for banquets, family gatherings and birthdays.
