The story
Vivendum sits at Vissersstraat 2 in Dilsen, Belgium, where chef Alex Clevers runs a modern French kitchen that holds one Michelin star (2026).
The kitchen leans on high-quality ingredients that are locally produced and seasonal. Gault&Millau awarded it 16/20 in 2026, noting that Clevers keeps seeking the best that nature offers. Some of his suppliers have delivered daily for more than 25 years.
The Christmas menu opened with tuna belly (toro) with cucumber, yuzu and dashi butter. Langoustine with carrot and kaffir lime followed, then wild sea bass under an artichoke and parsley crust with Champagne jus. Venison loin came with pumpkin, orange, leek and trompette de la mort. The menu was priced at €155, with wine pairings at €70.
The building dates to 1736 and was once a chaplain's house, now converted into a hotel with five rooms, including one suite and a duplex loft. Rooms are rented only together with dinner. In warmer months, the garden terrace, which the restaurant describes as Belgium's most beautiful, is open for outdoor dining. Clevers also launched his own gin, Gin N9, bottled with nine traditional VOC spices.
