The story
Bistro Racine, at place de la Station 3 in Braine-le-Château, is a modern cuisine restaurant that holds one Michelin star (2026). Chef Jimmy Collodoro built the menu on French foundations with influences from further afield, and it changes with the seasons.
Collodoro trained at a hotel school in Brussels and then spent more than ten years in starred kitchens in Belgium and France. He opened Bistro Racine in Braine-le-Château in 2015. The kitchen works from what producers deliver, so the card shifts with the seasons and the arrivals. He describes the style as instinctive, with clear, pronounced flavours.
Classic dishes on the menu include a 63°C egg prepared in the chef's style, beef selected by the chef and grilled over embers in the oven, and a chocolate mousse with hazelnuts, cacao crumble and caramel. The evening menu runs four or five services. Gault&Millau gave the restaurant 15 points for 2026, noting that the move to this new address, a stone's throw from the original, has produced a brighter room. The space mixes modern and authentic touches, with a sleek interior and an open kitchen.
