The story
Nyde, at Tongersesteenweg 30 in Borgloon, is a modern cuisine restaurant that Gault&Millau scored 14 out of 20 in its 2026 regional guide to Haspengouw. The kitchen works with seasonal Haspengouw and Limburg produce, and the menu changes regularly.
Celine Bleys runs the kitchen. The restaurant describes its style as classic French cooking with a twist, built on seasonal ingredients and local terroir. Before taking over the restaurant where she had worked as a cook, she trained at Hotelschool Ter Duinen in Koksijde and cooked at L'Air du Temps, Couvert Couvert and De Pastorale.
Nyde runs two menus that change often. The vegetarian Van 't Veld menu centers on vegetables, while Zee & Land brings meat, fish and seafood to the table. Recent dishes have included witloof with blood orange and ajo blanco, hamachi with golden beet and jasmine, and veal served with morels and asparagus. Morels mark the start of spring here, and the restaurant treats them as a short-season product. On Thursday and Friday afternoons, a shorter lunch menu offers three courses from the suggestion menu.
Martijn Kellens leads service and the wine list, and his enthusiasm for wine shows at the table. The restaurant also offers a non-alcoholic pairing selection. In summer, guests can eat on the terrace, and the dining room is air-conditioned. Michelin lists Nyde as Recommended for 2026.
