The story
De Weijers Hoven at Melleveldstraat 4 in Bilzen is a regional cuisine restaurant that Gault&Millau scored 13 points in 2026. The kitchen has worked this way for more than thirty years, leaning on local products and classic bases with a contemporary finish.
Xavier Conings has run the stove for more than thirty years. His kitchen draws on produce from its own land and the surrounding region, and the menu changes with the seasons. Mussels from Zeeland with ginger, curry and leek, or wild duck with mushrooms, celeriac and cherry jus, show how local ingredients sit alongside flavours from further afield.
The dining room seats a maximum of 24 guests, which keeps evenings intimate. In warm months the summer terrace serves aperitifs and full meals outdoors. A separate party room takes up to 55 guests, and a meeting room takes up to 30 for business lunches and seminars. The We're Smart Green Guide awarded the restaurant two radishes in 2026.
