The story
Köhles Chefs Table in Serfaus, Austria, serves modern Austrian cooking at Dorfbahnstraße 24, 6534 Serfaus. Gault&Millau awarded it 17 points in 2026, and head chef Lukas Neier cooks a changing menu for a small group at a time.
Lukas Neier leads the kitchen with sous chef Frank Zappe. The menu is built around Serfaus and the cycle of nature, and the dishes carry names that play on the region. The room seats only a handful of guests, which keeps the pace unhurried.
The meal opens with hay bread and lye croissant, served with an assortment of butters and bacon crunch. Trout appears twice, as a tartare with lime and caviar and as a terrine with bergamot, alongside lettuce mousse and wild berry sorbet. A rabbit roulade is finished with a barley tea infusion, and a dark beer broth comes with artichoke chips and egg yolk in brown butter. The main course is beef, a bavette and braised neck, served with celery in several forms and chive oil.
Guests dine in a separate room with a direct view of the kitchen. Sommelier Kelly guides the drinks, which include house-infused aperitifs, the restaurant's own beer Dr. Köhle Hausbier, and alcohol-free pairings matched to each course.
