The story

Brasserie Leonis, Schruns: French-Austrian Cooking, Gault&Millau 14

Brasserie Leonis, at Silvrettastraße 8 in Schruns, is the French and Austrian restaurant of the Löwen Hotel Montafon. Gault&Millau rated it 14 points in 2026.

The kitchen

Head chef Janine Wieland cooks to a concept she calls "The New French". She builds it on regional, seasonal produce from Vorarlberg. French refinement meets Austrian tradition on the plate, and the Michelin Guide lists the restaurant as Recommended for 2026.

At the table

Gault&Millau describes a menu that opens with pickled duck breast, then salmon trout ceviche. A roasted onion essence with small Tyrolean dumplings follows, good enough that the reviewers could imagine it as a main course. The veal sirloin arrives with airy potato cushions, egg yolk foam, leaf spinach and a marrow bone, presented casually at the table. The meal closes with wild celery and celeriac alongside cherry sorbet.

Room and wine

Natural materials and warm colors set the tone, with Parisian bistro chairs and glass details recalling a classic French brasserie. Separate seating areas suit a lively evening or a quiet dinner for two. Sommelier Fabienne Hammer looks after a list of Austrian and international bottles, with many top vintages and an above-average choice by the glass.

History

On the record

2026
Gault&Millau — 14

The Leonis has evolved from a hidden gem into one of the finest dining destinations in the Montafon region. A pickled duck breast followed by a salmon trout ceviche make for an exceptionally successful menu overture. The roasted onion essence served with small Tyrolean dumplings is equally delightful. At this quality level, one could easily imagine the dumpling soup – as was once customary – as a main course. The veal sirloin, accompanied by airy potato cushions, egg yolk foam, leaf spinach, and a marrow bone, is casually presented tableside. That is how dining should be! A combination of wild celery and celeriac flavors paired with cherry sorbet elegantly crowns the outstanding menu. The wine service in the brasserie stocks many top vintages, with an above-average selection available by the glass.
