The story
Döllerer at Markt 56 in Golling an der Salzach is an Alpine restaurant that Gault&Millau rated 19 points in 2026. It is the heart of a family house that has hosted guests since 1909 and now also runs an inn, a small hotel, a fine-food shop and a wine business.
Andreas Döllerer, Gault&Millau's Chef of the Year in 2010, builds his Austrian menus on products from the Alpine region, above all from Salzburger Land. The longest menu is the Göllüberquerung. Shorter routes include the Alpine Lunch, served on Saturday afternoons, and an à la carte "Best of" for guests who prefer to compose their own. Vegetarian menus are prepared on request, but the kitchen does not offer a vegan one.
The Glacier Turnip (Gletscherrübe) is the dish critics return to. The root is dried and rehydrated, then served with semmelkren, horseradish velouté and an elderflower vinaigrette. Char from the Bluntautal is marinated and set in a whey and brown butter broth with confit potato and local caviar. Pigeon from Nussdorf, roasted in mountain hay, is the main course for two.
Steep slopes behind the restaurant hold alpine fruit trees, and the edible garden has fifteen beehives. Their honey appears on the menu, alongside herbs and fruit grown on site. A viewing platform hangs over the vineyard, with the mountains beyond.
